Red Curry Tuna Steaks - Cooking, Coaching & Conversations with Dr Lucy Burns

Ingredients
- olive oil
- chopped onions, we used frozen
- zucchinis, chopped
- green beans, trimmed
- capsicum, sliced
- Mingle Seasoning 'red curry spice mix sachet'
- can of coconut cream
- frozen tuna steaks
Instructions
- Heat a large frying pan over medium heat and add some olive oil and chopped onions.
- After the onions have cooked for a few minutes add the veggies in.
- Sprinkle in the red curry sachet and pour in the coconut cream.
- Stir to combine.
- Add the tuna steaks into the curry. Cover and allow to simmer until the tuna and veggies are cooked through.
