Cheesy Chicken Meat Balls

A couple of weeks ago, we had the AFL grand final and like many people we had a gathering at our house. In the past gatherings were always an excuse for me to consume vast quantities of sugary food in a socially acceptable scenario.  Parties were always about the pavlova, the tira-mi-su and the lollies (because Lucy loved lollies). 

What to Eat at Parties

These days gatherings are less about the food and more about the social connection with the people- my nearest and dearest friends. We had a BBQ with expertly cooked steaks. My hubby doesn’t cook much in the kitchen but he is a master on the barbie. I whipped up a delicious salad using fresh ingredients and drizzled with herbs and olive oil.  I made the chocolate mousse that I shared in last week's recipe and had enough left over for breakfast the next two mornings! 

If any of you follow the AFL, I am a long long-suffering North Melbourne fan where perpetual disappointment is pretty standard. My hubby follows the Swans (ex-South Melbourne die-hard) and he too experienced his fair share of disappointment in this grand final. 

What never disappoints is this Cheesy Chicken Meatball recipe.  (Sorry about the cheesy segue here 😂) These meatballs are perfect to take to gatherings of all sorts. 

These are:

  • delicious eaten hot or cold,
  • are a cinch to whip up,
  • can be prepared ahead of time and 
  • freeze really well. 

What more could you ask for?

Recipe for Cheesy Chicken Meat Balls

  • 1kg chicken mince
  • 125g grated cheese parmesan or tasty
  • 1 egg, beaten
  • 1 teaspoon of salt
  • 2 tbsp of Mingle Seasoning * see notes 
  • 125 g sun-dried tomatoes, drained & chopped 

*Notes: 

  • Choose whichever seasoning you like. Mexican for a bit of zing. I also like Italian herbs or Green Goddess
  • Use Mingle sauces as a dipping sauce. I especially like sweet chilli with the Mexican  or tomato with the Italian  

Instructions

  1. In a large bowl combine chicken Mince and parmesan cheese.

  2. In a small bowl beat the egg with salt and seasoning.

  3. Add the egg mixture to the mince and combine well.

  4. Add the chopped sundried tomatoes to the meatball mixture.
  5. Roll into balls. You can make them big or small depending on what you like.

  6. Recipe probably makes around 20-30 depending on the size.

  7. Place batches  in the air fryer for 12-15 mins until golden brown and cooked through.

  8. Or cook in an oven at 180 for 25-30 minutes.
