Best Salad Ever

Salads used to be so boring when I was at Weight Watchers. They were entirely low-fat with an abundance of carrots, plastic cheese and Kraft Italian Dressing. They were seriously horrid.

Nowadays my salads look a lot different and they are super satisfying.

I like to get a variety of veggies, add some nuts or seeds, and some herbs and top it with a tasty dressing. Then all you need to do is pair it with some protein think fish, chicken or beef and voila - a party for your tastebuds!

This salad is amazing!

It has the perfect crunch with the celery, cucumber and pepitas balanced with some tart creaminess with the salad dressing and goat cheese.  

Definitely give it a go! 

Best Salad Ever with Avocado Vinaigrette (serves 4-6)

  • Base of salad leaves- Choose whichever you like I used a small cos 
  • ½ red onion, finely sliced
  • 1-2 stalks of celery, chopped
  • 1 punnet cherry tomatoes, chopped
  • 1 continental cucumber, chopped
  • 1 red pepper, diced 
  • 100g of Goats Cheese 
  • Handful of Pepitas 

Avocado Dressing (makes 8 servings)

  • 1 ripe avocado
  • 1/4 cup apple cider vinegar
  • Juice of one lemon 
  • 3/4 cup light olive oil or avocado oil 
  • Salt and pepper to taste
  • Add 1 tbsp of Mingle Green Goddess herbs if desired   

Instructions

  1. Place everything into a blender and blend until combined. 
  2. Add ¼ cup of water if you would like a runnier consistency 
  3. Keeps for 1 week in the fridge
