 Embrace a healthier take on Taco Tuesday with this scrumptious low carb option. Utilising ingredients like pork mince and a rich blend of vegetables, spices, and a unique egg-based soft taco shell, this recipe ensures a high-protein meal that's perfect for those managing insulin resistance and watching their carbohydrate intake.

I love a good Mexican Dish. Mexican dishes seem to have gazillion names but all taste fairly similar- The old me ate heaps of burritos, fajitas and tacos.

I was never a fan of the hard shell tacos which seem so messy. One bite and they fall apart.

This week I also tried Mingles Chipotle Seasoning which I really loved. It's got quite a smokey flavour and contrasts well with the sour cream.

You can make this recipe with a slow cooked shoulder of pork as in the photo but I used mince for speed 

 

Batch Cooking

This versatile mince recipe can be adapted and served with a low carb pasta like Slendier edamame pasta. It can be stopped with cauliflower rice and turned into a tasty cottage pie. It can be served in lettuce cups or on its own as a burrito bowl. Cook once. Eat Twice!

 

Ingredients

For the Soft Taco Shells (Makes 10):

  • 8 eggs
  • 4 cups loosely packed grated mozzarella
  • 1 tsp gelatine
  • 1/2 tsp salt

For the Mince:

  • 1.5kg pork mince
  • 2 packets Mingle Seasoning Chipotle Spice Mix
  • 1 tbsp Mingle Seasoning Meat All-rounder (or substitute with dried garlic, onion, salt, and pepper)
  • 3 zucchinis, diced
  • 1-2 red capsicums, diced
  • 500g mushrooms, diced
  • 700ml chunky passata
  • 1 tbsp tomato paste

To Serve:

  • Chopped lettuce
  • Avocado
  • Sour cream

 

Instructions

Taco Shells:

  1. Preheat a non-stick pan over medium heat or I used a Kambrook Pancake Maker and cooked for 4 mins 
  2. Mix the eggs, grated mozzarella, gelatine, and salt in a bowl until well combined.
  3. Pour a portion of the mixture into the pan, spreading it out to form a circle.
  4. Cook for about 2 minutes each side until firm and golden. Repeat with the remaining mixture.

Pork Mince:

  1. Cook the pork mince in a pan over medium heat until it starts to brown.
  2. Add the Mingle Seasoning Chipotle Spice Mix and Mingle Seasoning Meat All-rounder.
  3. Stir in the diced vegetables (zucchini, red capsicums, mushrooms).
  4. Pour in the chunky passata and tomato paste, simmering for around 20 minutes until the sauce thickens and the vegetables are tender.

Assembly:

  1. Place a taco shell on a plate, fill with the cooked pork mince mixture.
  2. Top with chopped lettuce, slices of avocado, and a dollop of sour cream.

 

Nutritional Information (Per Serving)

  • Protein: Approximately 40g
  • Net Carbs: Approximately 8g
