Our Low Carb Raspberry and White Chocolate Cheesecake offers a delicious solution, allowing you to enjoy a celebratory treat without compromising your dietary goals.

Low Carb Raspberry and White Chocolate Cheesecake: 

Ingredients:

  • 500g cream cheese, softened (2 x 250g packets)
  • 250ml thickened cream
  • 200g Vitawerx white chocolate, chopped
  • 85g Lakanto monk fruit sweetener
  • 170g raspberries (fresh or frozen)
  • 1 1/2 tsp vanilla extract
  • Juice of 1 1/2 lemons
  • 2 teaspoons (6g) unflavored powdered gelatin
  • 3 tablespoons (45ml) lukewarm water
  • 85g butter, melted (for the base)
  • 125g almond flour (for the base)

Instructions:

  1. Prepare the base:
    • Preheat the oven to 180°C (350°F).
    • Mix the melted butter and almond flour in a bowl until well combined.
    • Press the mixture into the bottom of a 23cm (9-inch) springform pan.
    • Bake for 10 minutes, then set aside to cool.
  2. Prepare the gelatin:
    • In a small bowl, sprinkle the gelatin over the lukewarm water.
    • Let it sit for a few minutes until the gelatin swells.
    • Microwave in 15-second intervals, stirring after each, until the gelatin has completely dissolved.
  3. Make the filling:
    • In a large bowl, beat the cream cheese until smooth.
    • Add the Lakanto monk fruit sweetener and mix until well incorporated.
    • Slowly pour in the thickened cream while mixing on low speed.
    • Add the vanilla extract and lemon juice, mixing until just combined.
  4. Melt the chocolate:
    • Gently melt the Vitawerx white chocolate in a heatproof bowl over a pot of simmering water, stirring occasionally.
    • Let it cool slightly, then fold into the cream cheese mixture.
  5. Add the gelatin:
    • While mixing the cream cheese mixture continuously, slowly drizzle in the dissolved gelatin.
    • Mix until fully incorporated and smooth.
  6. Assemble the cheesecake:
    • Pour half of the cheesecake mixture over the cooled base.
    • Gently fold half of the raspberries into the remaining mixture.
    • Pour this over the first layer.
    • Top with the remaining raspberries.
  7. Chill and serve:
    • Refrigerate the cheesecake for at least 6 hours, preferably overnight.
    • Before serving, run a knife around the edge of the pan to loosen the cheesecake.
    • Remove the springform ring and slice into 12 servings.

“Everything in moderation” is the catchcry of dieters and non-dieters alike.

We would argue though that this is wrong.

“Everything in balance” is what we at Real Life Medicine believe.

The “balance bit” is sometimes hard and is what we need to learn and practice. Weight loss is all about balance. Being overweight means something is not in balance. In many cases, it is your metabolic hormones that are not in balance, specifically insulin (our fat-storage hormone).

Many of us develop this imbalance by eating more carbohydrates than our metabolism can handle, resulting in your pancreas making excess insulin and causing you to store excess fat.

 

Sugar Addiction

If you have sugar addiction, then the reward system in your amygdala is overstimulated and out of balance. Your receptors are upregulated and you have a response to hyperpalatable food that is out of balance.

This is different for every person.

Just as there are people who drink alcohol who are not alcoholics, there are people who eat sugar who are not addicted to sugar. However, there are many people out there who are addicted to sugar and for them, the right balance is no sugar.

To tell a sugar addict to “eat everything in moderation” is setting them up for failure. For us, Dr Mary and Dr Lucy, it is balanced to live by the mantra:

“One is too many and a thousand is never enough”.

 

How do we get out of balance?

If you always eat to soothe emotions then your tool kit for emotional management is out of balance. Adding more tools is the key to restoring this balance.

If celebrating and rewards are always about food and drink, then again the toolkit is out of balance.

Our body and our mind work best when things are in balance.

This is not an exhaustive list but an example of things that are often out of balance:

  • Sleep balances with wakefulness
  • Social connection balances with time alone
  • Eating balances with fasting
  • Positive emotions balance with negative emotions
  • Comfort balances with discomfort

  • Ambition balances with satisfaction

 

Weight loss is all about balance

They give you all the tips, all the tricks they have learnt from years of experience.

And you practice…

Everyday...

With a rope of the ground.

You walk up and down that rope and if you make a mistake, a wobble, fall off…

You just keep practising.

You persist. Do you give up after the first wobble? No.

After some time, the tight rope is raised off the ground - about knee height.

Again more practice.

Your fellow circus buddies encourage you. “You can do it!”

Some wobbles.

You persist.

You’re patient.

There are days when you want to give up. It seems so hard. It feels like you will never get there. You keep going. You ask for help when it gets hard.

You focus on your goal to walk the tightrope in the big top.

You think about the crowd clapping in amazement. You think of the exhilaration. Your transformation to becoming an expert tightrope walker.

 

You practice and practice and you’re ready.

You know it. You can feel it!

You’re going to walk the tightrope in the big top.

At first, you do it without the crowd and with the safety net in place.

You’re up high and you’re doing it.

All that practice is paying off.

You are confident, focused and ready.

You can walk that tightrope with your eyes shut. You have practised it so often.

It’s a skill, a habit that’s now automatic.

Finally, the day comes. You are triumphant.

You walk the tightrope in the big top without a safety net.

You feel amazing.

You are confident about your skills.

You have mastered it.

You are now an expert tight-rope walker

But to remain skilled, you keep practising.

You keep performing.

There are days when you don’t want to but you persist.

You practice.

After all, you are an expert tightrope walker and that’s what expert tightrope walkers do.
