Low Carb Gingerbread Cookies

These spicy, crisp cookies bring the warm flavours of Christmas to your low carb table without compromising on taste or health goals.
These are great to make with kids who love decorating them. You can use all sorts of cookie cutters-gingerbread men, Christmas trees or just use a glass and make Christmas baubles.
Low Carb Gingerbread Cookies:
Ingredients:
- 2 cups almond flour
- 2 tbsp coconut flour
- 1/2 cup of sweetener- Lakanto Brown Sugar Replacement
- 2 1/2 tsp ground ginger
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 large egg
- 3 tbsp butter, melted and cooled
- 1 tsp vanilla extract
- 1/2 tsp apple cider vinegar
Instructions:
- In a large bowl, whisk together almond flour, coconut flour, sweetener, ginger, cinnamon, nutmeg, cloves, salt, and baking soda.
- In a separate bowl, beat the egg, then mix in melted butter, vanilla extract, and apple cider vinegar.
- Add the wet ingredients to the dry ingredients and mix until a dough forms. The dough will be slightly sticky.
- Wrap the dough in cling film and chill in the refrigerator for at least 1 hour.
- Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.
- Roll out the chilled dough between two sheets of parchment paper to about 1/4 inch thickness.
- Use cookie cutters to cut out shapes and carefully transfer them to the prepared baking sheets.
- Bake for 8-10 minutes, until the edges are lightly browned.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Optional Sugar-Free Royal Icing:
- 1 cup sweetener (Lakanto icing sugar Replacement)
- 1 egg white
- 1/4 tsp cream of tartar
Whisk ingredients together until smooth. Use to decorate cooled cookies.
