Low Carb Apple Crumble - Cooking, Coaching & Conversations with Dr Lucy Burns

Cooking, Coaching & Conversations with Dr Lucy Burns is live on Facebook at 5.30pm Tuesday nights. In this weeks episode, Dr Lucy showed how to whip up a quick and easy low carb dessert that the whole family will love - low carb 'apple' crumble.
Ingredients
- 500g zucchini
- butter, melted
- 1tsp cinnamon
- 2 tbsp sweetener
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1/4 cup coconut flour
- 1 cup of almond flour
- 2 tbsp of sweetener
- 1 cup pecans or macadamias, chopped
Instructions
- Peel and chop the zucchinis.
- Heat a pan and add in a tablespoon of butter, cinnamon, sweetener, lemon juice and vanilla and stir to combine.
- Add in the zucchini, stir and allow to cook for 10 minutes.
- While the zucchini is cooking, make the crumble.
- In a bowl, combine the coconut flour, almond flour, sweetener, chopped nuts with the melted butter and stir to make a crumble.
- Once the zucchini has cooked down, add it to a baking dish and top with the crumble mixture.
- Bake in the oven until golden brown and heated through.
