Easy Peasy Low Carb Eats: Salad, Burgers + Mug Dessert

Watch Dr Lucy whip up an Easy Peasy low carb feast: Salad, Deconstructed Burgers, and Hug in a Mug Dessert!

Easy Peasy Salad:

Ingredients:

  • 3 big handfuls of mixed greens
  • Half a punnet of baby tomatoes, chopped in half
  • 50g of goat cheese, crumbled
  • Mingle Green Goddess seasoning (to taste) - Discount code RLM15
  • Splash of olive oil

Instructions:

  1. In a large mixing bowl, combine mixed greens, chopped baby tomatoes, and crumbled goat cheese.
  2. Sprinkle Green Goddess seasoning over the salad to your liking.
  3. Drizzle a splash of olive oil over the salad.
  4. Gently toss the salad ingredients until well combined.
  5. Allow the salad to marinate for 20 minutes, allowing the flavors to meld.

Deconstructed Burgers:

Ingredients:

  • 2 x 225g meat patties (preferably from Our Cow, RLM20)
  • Sliced real cheese (not processed)

Instructions:

  1. Air fry the meat patties until cooked.
  2. Once cooked, top each patty with slices of real cheese.

Assembly:

  1. Place a generous portion of the Easy Peasy Salad on each plate.
  2. Gently place a cooked meat patty with melted cheese on top of the salad.

Hug in a Mug Dessert:

Ingredients:

  • 1 tablespoon of butter
  • Dry mix for HUG IN A MUG mug cake - discount code RLM10
  • 1 beaten egg
  • Cream and berries for topping

Instructions:

  1. In a microwave-safe mug, melt 1 tablespoon of butter.
  2. Add the dry mix and beaten egg to the melted butter in the mug.
  3. Microwave on high for 60-90 seconds, or until the mug cake is set.
  4. Allow the mug cake to rest for a few minutes as it will be very hot.
  5. Serve the mug cake in a bowl and top with a dollop of cream and a handful of fresh berries.
