How to Make Easy Low Carb Seed Crackers

Ingredients

  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sesame seeds
  • 1/4 cup flax seeds
  • 1/4 cup chia seeds
  • 1/4 cup hemp seeds
  • 2 tablespoons coconut oil
  • 1 1/2 cups boiling water
  • 1/2 teaspoon salt

Method

  • Preheat your oven to 160°C (300°F).
  • Line a large tray with baking paper
  • In a bowl, combine the flax seeds, chia seeds, and coconut oil.
  • Add the boiling water and stir well until the coconut oil is melted.
  • Let the mixture sit for 20 minutes until the chia seeds and flax seeds gel.
  • Add the sunflower seeds, pumpkin seeds, sesame seeds, hemp seeds, and salt to the gelled mixture, and stir until well combined.
  • Place the seed mixture on the tray. Use the back of a spoon to flatten the mixture as thin as you want.
  • Bake for 30 minutes, then remove from the oven.
  • Using a butter knife, cut the crackers into squares, then put them back into the oven.
  • Bake for a further 30 more minutes or until the crackers are crispy and golden.
  • Let the crackers cool down on a rack, then store them in an airtight container.
