Chicken & Mushrooms - Cooking, Coaching & Conversations with Dr Lucy Burns

This week on Cooking, Coaching & Conversations Dr Lucy did a pantry and fridge dive to find the ingredients to make a quick and easy low carb real food meal. Chicken, mushrooms, spinach and cream come together so easily to make a delicious and nutritious meal.

Ingredients

  • butter
  • chopped onions (we used frozen)
  • 500g chicken thighs, chopped (skinless & boneless)
  • mushrooms, sliced
  • Mingle Seasoning 'Hearty Stroganoff' sachet
  • spinach
  • cream
  • salt
  • cooked cauliflower rice to serve 

Instructions

  1. Heat a pan and add some butter with the onions. Cook to soften the onions.
  2. Add the chicken to the pan and stir to cook.
  3. Add the mushrooms & Stroganoff sachet and stir while it is cooking.
  4. Once the chicken and mushrooms are cooked, add the spinach and stir to wilt it down.
  5. Add some salt and cream and leave it to simmer down. 
  6. Once it is ready, serve it with cauliflower rice.
