Warm Chicken Salad - Cooking, Coaching & Conversations with Dr Lucy Burns
Jan 11, 2023This week on Cooking, Coaching & Conversations, Dr Lucy made a perfect summer dinner - chicken salad! It is quick to put together, fresh, nutritious and delicious. What more could you ask for?
Ingredients
- 4 chicken thighs
- olive oil
- Minge Seasonings 'All Purpose' blend
- salt
- spinach leaves
- cherry tomatoes
- cucumber, chopped
- sundried tomatoes or roasted capsicum
- capsicum, chopped
- goat's or feta cheese
Instructions
- Drizzle olive oil on the chicken thighs and sprinkle with the Mingle Seasoning and some salt.
- Cook the chicken thighs in the air fryer at 200C for 15 minutes or until they are cooked through.
- Add your spinach leaves, cherry tomatoes, cucumber, capsicum, sundried tomatoes & goat's cheese to a bowl.
- Drizzle some olive oil on the salad and season with salt.
- Once the chicken is cooked, slice it and serve it on top of the salad.
