Warm Chicken Salad - Cooking, Coaching & Conversations with Dr Lucy Burns

This week on Cooking, Coaching & Conversations, Dr Lucy made a perfect summer dinner - chicken salad! It is quick to put together, fresh, nutritious and delicious. What more could you ask for?

Ingredients

  • 4 chicken thighs
  • olive oil
  • Minge Seasonings 'All Purpose' blend
  • salt
  • spinach leaves
  • cherry tomatoes
  • cucumber, chopped
  • sundried tomatoes or roasted capsicum
  • capsicum, chopped
  • goat's or feta cheese

Instructions

  1. Drizzle olive oil on the chicken thighs and sprinkle with the Mingle Seasoning and some salt.
  2. Cook the chicken thighs in the air fryer at 200C for 15 minutes or until they are cooked through.
  3. Add your spinach leaves, cherry tomatoes, cucumber, capsicum, sundried tomatoes & goat's cheese to a bowl.
  4. Drizzle some olive oil on the salad and season with salt.
  5. Once the chicken is cooked, slice it and serve it on top of the salad.
