Chicken, Bacon & cabbage - Cooking, Coaching & Conversations with Dr Lucy

This week on Cooking, Coaching & Conversations Dr Lucy is making another quick and easy dinner - chicken, bacon & cabbage.

Ingredients

  • 1kg chicken thighs
  • 1/2kg bacon
  • onions, chopped (we used frozen)
  • cabbage
  • capsicum
  • Mingle Seasoning Dill & Garlic spice mix
  • salt
  • sour cream

Instructions

  1. Heat up a large pan.
  2. Cut up the chicken into chunks and add to the pan.
  3. Slice the bacon and add to the pan also.
  4. Add the onions to the pan.
  5. Cook the chicken, bacon and onions for a few minutes to brown.
  6. Chop up your veggies.
  7. Add the seasoning, salt and veggies to the pan and stir through.
  8. Cover and allow to cook, stirring occasionally.
  9. Once the chicken and veggies are cooked, stir through the sour cream.
