Butter Chicken Extender - Cooking, Coaching & Conversations with Dr Lucy Burns

This week on Cooking, Coaching & Conversations Dr Lucy is using her leftover takeaway butter chicken to create a new meal. She lovingly calls it butter chicken extender! Using leftover butter chicken sauce from a takeaway dinner and adding extra chicken to make sure it is protein-packed. Served with cauliflower rice it is a quick, delicious and nutritious meal.

Ingredients

  • Leftover butter chicken sauce
  • chicken breast or thigh, chopped
  • cauliflower rice
  • frozen peas

Instructions

  1. Place your leftover butter chicken sauce in a saucepan and bring to a simmer. 
  2. Add the chopped chicken and continue to simmer to cook the chicken in the sauce.
  3. Cook the cauliflower rice and frozen peas (or whatever veggies you have on hand) and you can then serve them alongside the butter chicken or make it a one-pot wonder and cook everything together!
